If you're a more adventurous water person, you can rent a kayak and paddle across the bay to the monument too, - closer to the dolphins if they are there! There's awesome scuba too - check out http://www.jacksdivinglocker.com for a great scuba outfit to dive with. They also do dolphin swims if you are into that! =) I worked for them for 5 years, so I am biased... =) I second the Fair-Wind recommendation as a former Big Island resident and having been on it myself.
